A path filled with baking has sparked a fascination for the croissant.

Copenhagen Bakery is founded on the deep roots of old Danish baking history, art, and traditions—with the goal of establishing consumer trust based on an understanding of quality and craftsmanship.

In the bakery, there is a desire to continually improve. With a constant strive for betterment, the concept must remain dynamic, never stagnate, and continue to evolve and be optimized over time.

2. Sneezing Fruits

You need to know where to look to find Sneezing Fruits. The small coffee bar is well-hidden in one of Islands Brygge’s many backyards. A true hidden gem.

The goal is to create a coffee bar that builds strong relationships with the surrounding neighbors.

Sneezing Fruits serves coffee from the Swedish roastery, Koppi, and baked goods are delivered from the sister café Alice, as the priority is to provide space for seated guests.

3. Alice

A gathering place for the people of Amager, where simplicity and quality go hand in hand.

In a small space on a side street off the busy Amagerbrogade lies the ice cream and coffee bar, Alice. The goal is to create a gathering spot for the people of Amager, where simplicity and quality work together seamlessly.

At Alice, you can enjoy baked goods, coffee from Koppi, and ice cream. The focus is on the ingredients, with every aspect of Alice’s recipes thoughtfully considered.

4. Bageriet Benji

Locally in Nørrebro, former Noma chef Rasmus Kristensen has opened the bakery Benji. With a foundation in a classic modern basic assortment, Rasmus aims to create a bakery where quality and innovation go hand in hand, using his extensive knowledge and passion for baking.

Benji Bakery is known for its sourdough buns, croissants, and innovative Danish pastries. According to Rasmus, guests should “expect the unexpected.”

The bakery was nominated for “Best Bakery in the City” by Berlingske in 2022.

Bageriet blev nomineret til “Byens bedste bager” af Berlingske i 2022.

I believe that the Danish interest and love for good sourdough-based bread is here to stay.
