Raadet Aps x Carama Familiy Office

 

Raadet is the driving force behind three Copenhagen restaurants and, most recently, a fishmonger. These include Krogs Fiskerestaurant, Maven Restaurant & Vinbar, Restaurant Cholon, and the fishmonger Pearl&Fin, which launched in 2024. Each restaurant offers its own unique atmosphere, yet they all share a dedication to exquisite food, passion, and a desire to tell stories. The establishments are owned by Thomas Gaarde and Peter Bille Krogh, with Carama Family Office serving as an investor since 2023.

1. Krogs Fiskerestaurant

Krogs Fiskerestaurant is one of Copenhagen’s oldest restaurants, with over 100 years of service.

Located on Gammel Strand, where the fishwives once presented the day’s fresh catch, Christian Krog(h) created culinary surroundings that have been closely linked to Copenhagen’s cultural and social history since 1910 – a place filled with stories and memories.

As a guest at Krogs, one can enjoy a gastronomic experience inspired by the Nordic seas.

2. Maven Restaurant & Wine bar

Restaurant Maven is known for its unique setting in Nikolaj Church and its Nordic bistro cuisine, where guests can enjoy classic meals in a cozy and informal atmosphere in the heart of Copenhagen. Here, quality wines and good beers are served at fair prices, alongside classic, homemade dishes made from the finest ingredients.

‘Maven’ is the nickname that Nikolaj Square had in the 19th century, when it was home to the city’s butcher stalls. As a result, the square became known as ‘Maven’ in popular parlance.

3. Restaurant Cholon

With a passion for Vietnamese and Southeast Asian cuisine, Lâm Lê brings a unique approach to Cholon.

Cholon offers a curated selection of authentic dishes, with a special focus on creating a harmonious balance between health and indulgence.

Cholon means “the great market” in Vietnamese and refers to one of the largest Chinatowns in the world, located in Saigon.

4. Pearl&Fin

 

Pearl&Fin is an extension of Krogs Fiskerestaurant, created with a passion for fishing and gastronomy to form a universe where tradition and innovation meet. Rooted in both classic techniques and modern flavor experiences, the goal was to create a place where fish receives the attention and respect it deserves—both on the plate and in the conversation about sustainability. This led to the creation of Pearl&Fin, a fishmonger under Krogs restaurant, where both seated and walk-in visitors can be introduced to fish and its endless possibilities.

Pearl&Fin aims to change the way Danes prepare, process, and eat fish. They are reviving old traditions to minimize waste by utilizing the entire fish, extending its shelf life, and exploring a broader flavor palette that takes fish dishes to new heights.
